Product Description

1.Processing technology of Heavily Alkalized Cocoa Powder
Deep alkalization process
   By adding edible alkali (such as potassium carbonate or sodium carbonate) to cocoa raw materials for prolonged or high concentration treatment, their chemical properties are significantly altered. This treatment will destroy some natural acidic components and increase the pH value to 7.5-8.5.
Differences from light alkalized cocoa powder.
   Compared to light alkalization (pH 6.5-7.0), deeply alkalized cocoa powder has a higher degree of alkalization, darker color (close to dark brown or black), richer flavor, and weaker acidity.
2.Physical characteristics
1)Color and aroma
   Due to the enhanced Maillard reaction during the alkalization process, the color deepens significantly and produces a richer burnt flavor.
2)Solubility and stability
    It has good dispersibility in hot water, suitable for water-based applications such as beverages and baking, and has high colloidal stability, which can reduce particle precipitation.
3.Application scenarios
1)Food processing
   Baking: Used for dark cakes, cookies, etc., to enhance color and flavor consistency.
   Beverages such as hot cocoa and milkshakes have better solubility and stability.
2)Industrial use
   Some highly alkaline products are used for chocolate coatings or candy fillings that require dark color and low acidity
